This sounds fabulous. I used to have marcella’s wonderful book and somebody STOLE it. I considered taking out a contract on them

Definitely need that contract, my first copy was held together with elastic bands for years, and was reluctantly gifted to a neighbour when I found a replacement in a charity shop. The cookbook gods were watching over me that day. The salad was exceptional in flavour and texture, give it a try.

I love this! Fantastic title. One of my friends — who I introduced Marcella’s sauce to — blitzes the onion into the sauce at the end because she can’t bear to discard it. I don’t always find the onion to be cooked through enough to do this but your idea of sautéing it cleverly solves that issue. Onion-y croutons sound yummy!
