Thank you Kar, you are going to love this paste and the dishes you'll be able to create with it. Happy new year to you both, I hope your evening celebration is all you have dreamed it will be.
Oh you were so blessed having the chance to learn from Manis and to experience the "old" Bali. We'll be tuning in avidly to this new series 💐 with mortar and pestle at the ready. Do you normally use a cobek, or should we break out the giling 😉?
I really was blessed to know this old Bali, and form such meaningful friendships, well they are my Bali family. I’d think a cobek will do the trick, that’s what Manis uses.
Hehe glad to hear that, though it might have been a good excuse to break out the giling - we haven't used it in over 2 years cos it's so heavy to move about.
It's 2 feet long and takes 2 able-bodied people to lift 😣. Over 80 years old - belonged to my friend's nenek, who was going to throw it out cos she wasn't using it anymore.
Of course I couldn't let a treasure like that get junked, so my friend and I lugged it to my place. That was nearly 20 years ago - wouldn't have the strength to do it now.
Well that has made my year Leana, it and you have been waiting for this day. How I’d love to be with you to make this Bumbu on this well seasoned stone.
Hi Leana, and happy new year to you and your family. For this recipe I used a food processor, as I make quite a lot, but I was taught on a large cobek. I've had a few myself over the years, but they have all broken. I now have a selection of mortar and pestles sitting on there own bench ready to go in my kitchen, so they are used several times a day. I will get the spice paste post out tomorrow, so you can start the year on a spicy note. Where in the world do you live Leana?
Would like to get a food processor for times when we need to do large batches, but my aunt refuses to use anything other than a mortar, even with arthritis in her wrists 🙄
Oh we have a little collection too, partly cos some shapes and surfaces are better for certain things, but mostly cos we just love em 😉. We've moved around a lot all over Asia, but somehow we've managed to lug em along with us, though sadly a few did get cracked. We used to visit Victoria regularly, but we never made it north to Queensland - you've got so much great produce to work with, Lisa!
Omg, I love this story Lisa ❤️
Can’t wait to learn your base recipe

Bless her, even my wrists let me know after a lot of cooking for a class or special event.

We sound like culinary kin Leana. I’ve been writing the Bumbu post today, but was distracted my a novel and the couch, will have it up tomorrow.
You are so kind Ed, thank you.
